Try this easy great dish tonight!
Mediterranean Greek Salad
3 English Cucumbers sliced and partially peeled (long ones wrapped in plastic)
1 1/2 cups Feta (low fat available)
1 cup sliced black olives
3 cups Roma tomatoes
1/3 cup diced oil packed sun dried tomatoes drained but reserve the oil!
1/2 red onion chopped
salt and pepper to taste
Toss it all together in a large bowl adding 2 Tbs of the reserved oil. Chill in fridge until serving. Yummy!!
Hint...for more of a full meal toss in some cooked cheese tortellini!!
